A candida diet involves cutting out foods that may worsen or encourage candida overgrowth and eating more foods that help to control it. For example when on a candida diet you need to avoid junk, processed and refined foods, and you need to cut out sugar. This is because candida eats sugar so when you eat foods that contain sugar, or turn to sugar when you eat them like white bread, you are actually feeding the yeast and helping it grow. About Stevia

Stevia is a plant that is actually part of the sunflower family and grows in tropical and subtropical countries like South and North America. Stevia is also known as sweet leaf or sugarleaf and is used as a substitute for sugar by many people though its use started in South America. The leaves of the plant are much sweeter than table sugar though so when using as a substitute in cooking and stevia recipes less is needed. In fact in Japan Stevia actually makes up about 40% of their sweetener market and is used in a wide range of food products including Coca Cola. For candida sufferers and those on a candida diet the good news about stevia is that it is not a sugar compound the candida will eat which is why you can include it in your food and drink. You can get it in several forms, dried and ground stevia leaf, whole leaves, or liquid extracts.

1 cup of sugar equals 1 ? tablespoons of Stevia powder or 1 teaspoon of Stevia liquid.

1 tablespoon of sugar equals 6 to 9 drops of Stevia liquid.

1 teaspoon of sugar equals 2 to 4 drops of Stevia liquid.

Stevia Recipes for a Candida Diet

A lemon drink

Ingredients:

  • Water
  • A lemon
  • Stevia powder

In 32 oz of water add the juice of half a lemon and a sprinkle of Stevia powder to taste.

Ginger Ale

Ingredients:

  • ? cup of peeled and chopped fresh ginger root
  • ? tsp stevia powder
  • 3 ? cups water
  • 2 tbsp vanilla
  • 1 tbsp lemon extract
  • Carbonated water

Boil the ginger root in the water for about ten minutes then strain and put the liquid in a jar. Add the stevia, lemon and vanilla and leave to cool. Then store in the fridge and drink when you want to.

Homemade Jam

Ingredients:

  • Pectin powder
  • 3/4 tsp powdered stevia extract
  • 1 cup fruit juice concentrate unsweetened
  • 1 ? quarts fresh berries
  • Calcium water

Make sure the jars are cleaned and sterilized. Wash the berries of choice then remove any stalks and husks and mash them ? you should end up with 3 cups of squashed berries. Put them into a pan and add 4 tsp of calcium water then put on to bring to a boil. In another pan boil the juice then add to a blender and add 2 tsp pectin powder. Blend for a couple of minutes to dissolve the powder. When the pan with the fruit is boiled add the juice with the pectin in it and stir well for 1 minute. Then add in the stevia extract boil again then take off the heat. Pour the jam into the jars making sure you leave a half inch of space from the top. Screw on the lids (2 piece) and boil them in water for 5 minutes. Take out of the water and leave to cool. You know if the lids have sealed because they should pop.

Banana Bread

Ingredients:

  • ? tsp salt
  • 2 cups whole wheat pastry flour
  • 2 ripe large bananas
  • ? tsp powdered stevia extract
  • ? tsp concentrate stevia
  • 1 tbsp lemon juice
  • 1/3 cup oil
  • ? tsp baking soda
  • 1 large egg
  • 1 tsp baking powder
  • ? cup chopped nuts
  • 1 tsp vanilla extract
  • ? cup buttermilk or plain yogurt

While you use some oil to grease a loaf pan preheat your oven to 350 degrees F. Then mash the bananas in a bowl and ass in the lemon juice, and the stevia concentrate and extract. In a different bowl sift the salt, flour and leavenings together. In a larger bowl beat the egg and oil together then add the buttermilk or yogurt and the vanilla. When this is combined add the mashed bananas and then fold the dry ingredients into this bowl. Try to avoid stirring, just keep doing the fold action and it will combine. When the flour is almost folded completely in add in the chopped nuts, the finish folding. Pour into the loaf pan and place in the oven. Leave for between 50 to 60 minutes then take out, and turn onto a cooling rack. To see if it is cooked through use a toothpick and stick in the middle and if it is clean when you pull it out the banana bread is done.

Blueberry Muffins

Ingredients:

  • ? cup almond meal
  • 1 ? cups wholemeal flour
  • ? cup rolled oats
  • ? tsp salt
  • 2 tbsp Stevia
  • ? tsp cinnamon
  • ? tsp nutmeg
  • 1 tsp baking soda
  • 1 cup of fresh blueberries or 1 can drained
  • 60ml milk
  • ? cup plain yogurt
  • 1 tsp vanilla
  • 1 egg
  • ? cup oil
  • 180 ml pineapple juice

Preheat the oven to 375F and then soak the oats in the pineapple juice for 15 minutes. You can use other juice such as orange, but make sure you use proper oats not quick cooking ones. In a bowl mix together the oil, egg, yogurt, milk and vanilla. Add in all the other liquid ingredients and finish mixing. In another bowl sift the flour, baking soda, stevia and salt. Fold in the dry ingredients into the wet and just before the flour is fully mixed in, fold in the blueberries. Grease a 12 hole muffin tin and pour in then cook for about 25 minutes. If not eating all within a couple of days wrap and freeze individually, then take out as you want one and microwave for 30 seconds.

Pumpkin pie

Ingredients:

  • One 9 inch pre-cooked pie crust
  • A pinch of sea salt
  • 1 tbsp vanilla flavoring
  • 1 tsp pumpkin spice
  • 4 cups mashed butternut squash
  • 2 tsp green stevia powder
  • ? tsp liquid stevia

In a blender pour in all the ingredients and mix until smooth. Pour into the pie crust and put in the fridge for an hour or more. Serve plain or top with some whipped cream.
